青茶莲心(qingcha lianxin)
青茶莲心(qingcha lianxin)条形炒干乌龙茶之一。原产于福建省建瓯县水吉一带。青茶莲心外形条索紧细,似莲子心而得名。于4月上旬开采。鲜叶标准一芽二至三叶,春末及夏秋不采莲心。制法分晒青、摇青、炒青、揉捻、摊放、炒干等工序。晒青每筛摊鲜叶0.5kg,约晒10-20分钟,叶质柔软后收入晾青间晾青,约20-30分钟,叶温下降,开始摇青。摇青前2筛并1筛,手摇第一次20-30转,摇后晾青10-20分钟,再并筛1次,此后反复摇3-4次,至花香起、红边显为摇青适度。下筛堆放于大箩中,拌匀。炒青锅温120-130℃,投叶0.5-1kg,多闷少透,约3-5分钟,炒至叶不粘手,青气退尽起锅。手工揉捻先轻揉23分钟,成条后再重揉2-3分钟,条形紧结,茶汁揉出即解块摊放10-20分钟后炒干。炒干锅温85-90℃,炒时锅温渐降,以防焦灼,炒至足干即为毛茶。毛茶精制后分正茶、青珠、轻茶、副茶(梗、片、末)等花色,精茶多作窨制花茶的茶坯。
